Matcha, or milled, slightly bitter green tea goes very well with Wagashi, or Japanese cake. Wagashi is made mainly from bean paste, rice powder and sugar. Since they do not contain fat, they are healthy and do not affect your stomach very much. You can try making Wagashi at some shops with an instructor in Kyoto. The ones in the picture are my works. Expressing seasonal nature is important in Japanese culture, and the field of Wagashi is no exception. So the cakes for June are made in the shapes of Hydrangeas (top), Pink Flowers (left) and Green Plums (right).
