Japanese cooking

mirin, fermented Sake with sugar
A lady from Europe told me that Japanese cooking was very simple. She visited a Japanese family and saw how to cook Japanese dishes. She told that soup stock, soy sauce and mirin were all that you needed as seasonings.
REALLY???
She says that in her home country, many different kinds of spices fill her pantry's shelves. Wow!!
